This process creates a stronger and lighter weight crock for easier handling. Traditional fermenting crocks had a bottom to the lid-top capacity of 40 liters. You couldn’t fill it all the way or the pressing-stones wouldn’t fit. The Schmitt crock has a full 40 liters of fermenting capacity, so the crock is actually larger than 40 liters The Schmitt fermentation crock has a special cast gutter in the rim and includes a ceramic cover which fits into the gutter. It also comes with a 2-piece stone that is used to weigh down the vegetables and apply pressure during the fermenting process. The Nik Schmitt Fermenting Crocks have a delightful dark brown finish.
